Add annual plants in the first few years
Assuming that your building your garden with perennials (plants that come back year after year), adding a few annual (plants that only last one season) can help minimize your weeding until your perennials fill in over the next couple of years. You can choose vegetables to provide some extra produce or choose some flowers to provide colour. Either way you'll get more enjoyment with less weeding.
