Chives - Allium tubersoum
Chives can be used for many different purposes. Wherever onions are used, chives are a good substitute. Chives pairs well with almost any meat, fish, eggs, soups, stews and many vegetables. It can be used either fresh or dried, but more often it is used as a fresh herb. Chives is a companion plant for apples, tomatoes, roses and cabbages. Chives is one of the few herbs that consistently overwinters in our zone 3 climate. It is suggested that if growing in the ground, it is planted in a large pot directly in the ground to prevent unwanted spreading. Chives enjoys regular trimming and full sun.
